Preparation
- Wash the eggplants, cut in half and slice as shown in the video.
- Set the eggplants to one side. Mix the herbs and olive oil together in a separate bowl.
- Spread the marinade generously over the eggplants and leave to marinate for 15-20 minutes.
- In the meantime, preheat the barbecue.
- Place the eggplants on the barbecue, turning occasionally and brushing with the marinade.
- For the side dish, wash the rocket, cut the tomato into small cubes and mix with the olives and spices.
- Finally, serve the grilled eggplants with the salad and enjoy.
