Aliphatic is a term from organic chemistry referring to carbon compounds that do not contain aromatic ring systems. The word derives from the Greek aleiphar (fat, oil) and encompasses all open-chain as well as non-aromatic cyclic hydrocarbon compounds.

In contrast to aromatic compounds such as benzene, aliphatic compounds do not possess delocalized electrons in a conjugated ring system. They can be saturated (e.g., alkanes) or unsaturated (e.g., alkenes, alkynes).

Saturated Aliphatic Compounds

  • Alkanes: Hydrocarbons with only single bonds (e.g., methane, ethane, propane)
  • Cycloalkanes: Ring-shaped, saturated hydrocarbons without aromatic character (e.g., cyclohexane)

Unsaturated Aliphatic Compounds

  • Alkenes: Compounds with at least one carbon-carbon double bond (e.g., ethene)

  • Fatty acids: Long-chain aliphatic carboxylic acids such as palmitic acid or oleic acid are essential for human metabolism and cell membrane structure.
  • Aliphatic alcohols: Ethanol is used as a disinfectant and solvent in pharmaceutical preparations.
  • Aliphatic amines: Many neurotransmitters and drugs such as adrenaline and certain antihistamines contain aliphatic amine groups.
  • Anesthetics: Some anesthetic agents, such as isoflurane, are aliphatic compounds.

Importance in Nutrition

Aliphatic compounds are found in many foods and fulfill important biological functions:

  • Saturated fatty acids (e.g., in butter and meat) provide energy and serve as building blocks of cell membranes.
  • Unsaturated fatty acids such as omega-3 and omega-6 fatty acids are essential for heart health, brain function, and the regulation of inflammation.
  • Aliphatic aldehydes and alcohols contribute to the aroma of many fruits and vegetables.

Toxicology and Safety

Not all aliphatic compounds are safe for human health. Some short-chain aliphatic hydrocarbons (e.g., certain solvents) can be toxic when inhaled or upon skin contact. Aliphatic nitriles and isocyanates are considered hazardous industrial chemicals. In clinical toxicology, distinguishing between aliphatic and aromatic compounds is important because they exhibit different toxicity profiles and metabolic pathways.
