Apple cider vinegar is a fermented natural product that is created by the double fermentation of sugary apple juice: First, sugar is converted into alcohol, then acetic acid bacteria convert the alcohol into acetic acid.
Apple cider vinegar contains a variety of bioactive substances, including enzymes, amino acids, potassium, polyphenols and vinegar bacteria. Naturally cloudy, unfiltered apple cider vinegar with "mother" is particularly rich in probiotic microorganisms, which can contribute to intestinal health and immune function. Traditionally, apple cider vinegar is used as a home remedy to stimulate digestion, regulate blood sugar levels and support fat burning.
Studies suggest that apple cider vinegar can improve insulin sensitivity, lower the glycaemic index of meals and prevent binge eating. It is also popular in the alkaline surplus diet, although vinegar itself is acidic - in the body, however, it is metabolised in an alkaline way. Apple cider vinegar is also said to promote stomach acid production, which can be particularly helpful for bloating, flatulence or heartburn. In addition to internal use, apple cider vinegar is also used externally - for example as a hair rinse, skin tonic or foot bath for fungal infections. In naturopathy, it is often integrated into detox cures, fasting programmes or metabolic cures. When consumed, dilution in water is recommended (e.g. 1 tsp to 1 tbsp in a glass of water) to protect tooth enamel and gastric mucosa.
