Arachidonsäure ist eine mehrfach ungesättigte Omega-6-Fettsäure, die im Körper als wichtiger Bestandteil von Zellmembranen fungiert.
Arachidonsäure wird über die Nahrung aufgenommen, insbesondere aus tierischen Produkten wie Schweineschmalz, Eigelb oder Innereien. Zudem kann sie endogen aus Linolsäure synthetisiert werden.
Im Organismus ist Arachidonsäure ein zentraler Vorläufer für entzündungsaktive Botenstoffe wie Prostaglandine, Leukotriene und Thromboxane. Diese sogenannten Eicosanoide regulieren Immunprozesse, Schmerzempfinden und Gefäßreaktionen. Ein Übermaß an Arachidonsäure, vor allem bei einem gleichzeitig niedrigen Omega-3-Spiegel, kann jedoch entzündungsfördernd wirken und das Risiko für chronisch-entzündliche Erkrankungen wie Arthritis, Asthma oder Darmerkrankungen erhöhen.
Die Balance zwischen Omega-6- und Omega-3-Fettsäuren ist entscheidend. Letztere (etwa EPA und DHA aus Fischöl) wirken der Arachidonsäure-basierten Entzündungskaskade entgegen. Auch Lactoferrin zeigt in Studien eine modulierende Wirkung auf Entzündungsprozesse, wodurch es potenziell zur Regulation von Immunantworten beitragen kann.
