Arsenic is a naturally occurring metalloid found in the earth’s crust, water, and certain foods.
High levels of inorganic arsenic, the most toxic form, are often present in rice, seafood, and drinking water. Organic arsenic compounds, primarily found in fish and shellfish, are generally less harmful.
Health risks mainly arise from long-term exposure to inorganic arsenic. It has been classified as carcinogenic by both the WHO and the IARC. Chronic intake may lead to skin lesions, vascular disease, liver and kidney damage, and a higher risk of skin, lung, and bladder cancers.
To protect consumers, the European Union has set strict maximum levels for inorganic arsenic in foods, particularly in rice-based products and infant food. Risk can be further reduced by thoroughly washing rice and cooking it in excess water, which significantly lowers arsenic content.
