Auricularia is a genus of jelly fungi belonging to the family Auriculariaceae. The most well-known species is Auricularia auricula-judae, commonly referred to as the wood ear mushroom, Jew's ear mushroom, or cloud ear fungus. The name refers to the ear-shaped appearance of the fruiting body. Native to East Asia and used there for centuries as both food and medicine, this mushroom is now popular worldwide in cuisine and as a dietary supplement.

Botanical and Biological Characteristics

Auricularia grows predominantly on dead or decaying wood, frequently on elder, maple, or beech trees. The fruiting body is gelatinous, brown to reddish-brown in color, and typically ranges from 3 to 12 centimeters in diameter. When dried, it shrinks considerably and rehydrates to its original shape when placed in water, making it highly practical for storage and transport.

Nutritional Profile and Bioactive Compounds

Auricularia contains a wide range of beneficial compounds:

  • Polysaccharides: Especially beta-glucans, which are considered immunomodulatory and are actively being researched.
  • Dietary fiber: High levels of both soluble and insoluble fiber support a healthy gut microbiome.

  • Antioxidant activity: Laboratory studies show significant antioxidant capacity in Auricularia extracts.
  • Cholesterol reduction: Preliminary studies suggest Auricularia may have a positive effect on blood lipid levels.
  • Blood sugar regulation: Polysaccharides from Auricularia are being studied for potential benefits in diabetes management.
  • Antithrombotic properties: Adenosine and other compounds are being investigated for their ability to inhibit blood clotting.

  • Allergic reactions: Rare allergic reactions are possible, particularly in individuals with fungal allergies.
  • Pregnancy and breastfeeding: Insufficient data exist on the safety of high-dose extracts during these life stages; caution is recommended.
  • Raw consumption: Raw Auricularia mushrooms should not be consumed in large quantities, as heat-sensitive toxins may be present.
