Demineralized whey powder is a dried dairy by-product obtained during the production of cheese or casein, which is subsequently subjected to a specialized demineralization process. During this process, mineral salts such as potassium, sodium, calcium, magnesium, and phosphorus are partially or largely removed to deliberately reduce the mineral content. The result is a fine, pale powder rich in whey proteins and lactose but with a significantly lower mineral content than untreated whey.
The degree of demineralization is commonly expressed as a percentage (e.g., 40%, 70%, or 90%), where a higher percentage indicates a greater reduction in mineral content.
