As a food additive, Pullulan is primarily used in the European Union as a glazing agent (coating agent) for dietary supplements in capsule and tablet form, as well as for certain food products.

Production and Properties

Pullulan is produced biotechnologically through the controlled fermentation of the black yeast Aureobasidium pullulans, which secretes Pullulan as an extracellular polysaccharide. The resulting substance has several notable characteristics:

  • Biodegradable and non-toxic
  • Stable across a wide range of temperatures and pH levels

It is non-allergenic and is not broken down in the human digestive tract, as the body lacks the necessary enzymes. It therefore acts similarly to dietary fiber and is excreted unchanged. No adverse effects are known at typical levels of dietary intake.

Legal Framework in the EU

In the European Union, E1204 is authorized under Regulation (EC) No 1333/2008 on food additives. Its use is restricted to specific food categories, particularly dietary supplements in solid form and as a surface treatment for certain foods such as fruits and confectionery. The quantum satis principle applies, meaning the additive may only be used in the minimum quantity technically necessary.
