What is E1400 (Dextrin)?

E1400, commonly known as Dextrin, is a carbohydrate produced by the partial hydrolysis of starch through acid, heat, or enzymatic treatment. It consists of short to medium-length glucose chains and is a widely used food additive approved by the European Union under the E-number 1400. Dextrin is a natural degradation product of starch and is found in various processed and packaged foods.

Origin and Production

Dextrin is typically derived from plant-based starch sources, including:

  • Potato starch
  • Corn (maize) starch
  • Wheat starch
  • Rice starch
  • Tapioca starch

During production, starch is partially broken down using acid, heat, or enzymes, resulting in shorter sugar chains known as dextrins. The physical and chemical properties of the final product vary depending on the production method and the source starch used.

Uses in Food

E1400 is widely used in the food industry for a variety of purposes:

  • Thickener: to increase viscosity in sauces, soups, and dressings
  • Stabilizer: to improve texture and consistency in ready-made meals
  • Carrier substance: for flavors, colorings, and other additives
  • Filler: in baked goods, confectionery, and dietary supplements
  • Coating agent: for surface coatings in food processing

Safety and Tolerability

E1400 is considered a safe food additive. The European Food Safety Authority (EFSA) has classified dextrin as safe for human consumption. It is reliably broken down by digestive enzymes into glucose and serves as a readily available source of energy.

Individuals with gluten intolerance (celiac disease) should be aware that dextrin may be derived from wheat starch and could therefore contain gluten. In such cases, mandatory labeling is required on the packaging. Dextrins derived from corn, potato, or rice are gluten-free.

Excessive consumption of dextrin may cause digestive discomfort in some individuals, such as bloating or diarrhea, as undigested portions can be fermented in the large intestine.

Dextrin and Blood Sugar

Since dextrin is derived from starch and is ultimately broken down into glucose, it can influence blood sugar levels. The glycemic index of dextrin is relatively high. People with diabetes mellitus or insulin resistance should therefore monitor their intake of products that are high in dextrin.

Labeling

Foods containing E1400 must list this substance on the ingredient label either under its E-number E1400 or under the name Dextrin. If wheat starch is used as the source material, an additional allergen warning indicating the presence of gluten is mandatory.
