What is E1401?

E1401 refers to acid-treated starch, a modified starch produced by treating native starch (derived from sources such as maize, wheat, potato, or tapioca) with diluted acids such as hydrochloric acid or sulfuric acid at elevated temperatures. This process shortens the starch chains, resulting in a product with improved flow properties and processing characteristics.

Use in Food Products

E1401 is widely used in the food industry as a thickener, stabiliser, and gelling agent. Common applications include:

  • Puddings, desserts, and cream-based products
  • Sauces and dressings
  • Jams and fruit preparations
  • Confectionery and gummy sweets
  • Baked goods and ready meals

Production and Chemical Properties

During production, native starch is treated with diluted mineral acids under controlled conditions. This process of acid hydrolysis partially breaks down the long glucose chains within the starch granules. The resulting modified starch exhibits lower viscosity when heated, dissolves more readily, and forms firmer gels upon cooling. These properties make it particularly valuable in industrial food manufacturing.

Regulatory Approval and Safety

E1401 is authorised in the European Union under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has classified acid-treated starches as safe for consumption. No Acceptable Daily Intake (ADI) value has been established, as the substance is considered to present no safety concern at current levels of use. E1401 is digested in the body in a manner similar to regular starch and is broken down into glucose.

Labelling and Consumer Information

Foods containing E1401 must declare it in the ingredient list either as E1401 or as acid-treated starch. E1401 is generally well tolerated by most consumers. Individuals with starch intolerance or glucose metabolism disorders should exercise general caution with starch-containing products. Since the source material may include wheat or other gluten-containing cereals, individuals with coeliac disease are advised to check the origin of the starch on the product label.
