What is E1410 (Monostarch Phosphate)?

E1410, known as monostarch phosphate, is a chemically modified starch ester produced by esterifying natural starch with phosphoric acid or its salts. Approved as a food additive in the European Union, it is primarily used as a thickening agent, stabilizer, and gelling agent. The chemical modification of starch enhances its functional properties, including resistance to heat, acids, and mechanical stress.

Production and Chemical Properties

Monostarch phosphate is produced by reacting starch (derived from sources such as maize, potato, wheat, or tapioca) with phosphorus oxychloride or sodium tripolyphosphate. This process introduces phosphate groups in place of hydroxyl groups on the starch molecules, resulting in the following improved characteristics:

  • Enhanced viscosity and stability at high temperatures
  • Greater resistance to acidic and alkaline conditions
  • Reduced retrogradation (the tendency of starch to recrystallize after cooling)
  • Improved freeze-thaw stability

Applications in Food Products

E1410 is widely used in the food industry. Typical products containing this additive include:

  • Ready-made sauces and soups
  • Baked goods and confectionery
  • Dairy products such as puddings and desserts
  • Salad dressings and mayonnaises
  • Frozen food products
  • Baby food (in regulated quantities)
  • Dietary and special nutritional products

Safety and Tolerability

The European Food Safety Authority (EFSA) has assessed E1410 as safe for use in food. Monostarch phosphate is hydrolysed in the human digestive tract by digestive enzymes, releasing starch and phosphate -- both of which are physiologically well tolerated.

For most people, E1410 is well tolerated. Mild digestive discomfort may occasionally occur in sensitive individuals or with very high consumption. There is no evidence of carcinogenic, mutagenic, or reproductive toxic effects. Individuals with phosphate sensitivity or kidney disease should monitor their intake of phosphate-containing food additives as advised by their healthcare provider.

Labelling and Legal Basis

Under EU food additive regulation (EC) No. 1333/2008, E1410 must be declared on food labels either by its E-number or by the name monostarch phosphate. Permitted maximum levels vary depending on the food category and are set out in the relevant annexes of the regulation.
