What is E224?

E224, commonly known as potassium metabisulfite (also called potassium disulfite or potassium pyrosulfite), is an inorganic salt of sulfurous acid. It belongs to the group of sulfites and is widely used in the food industry as a preservative, antioxidant, and stabilizer. Its chemical formula is K₂S₂O₄.

Uses and Occurrence

E224 is used in a wide variety of foods and beverages to extend shelf life, prevent discoloration, and inhibit the growth of microorganisms. Typical areas of application include:

  • Wine and fruit juices: Prevents oxidation and unwanted fermentation
  • Dried fruits: Protects against browning (e.g., apricots, raisins)
  • Vegetable and potato products: Preservation and color retention
  • Seafood and shrimp: Prevents black spot formation (melanosis)
  • Beer and cider: Antimicrobial effect
  • Pharmaceutical preparations and cosmetics: As an antioxidant

Mechanism of Action

In an aqueous environment, E224 releases sulfur dioxide (SO₂), which is responsible for its primary effects. The key mechanisms are:

  • Antioxidant effect: SO₂ reacts with oxygen, preventing the oxidation of food components such as colorants and flavor compounds.
  • Antimicrobial effect: SO₂ inhibits the growth of yeasts, molds, and bacteria by disrupting enzymatic processes within the microorganisms.
  • Inhibition of enzymatic browning: The enzyme polyphenol oxidase, responsible for oxidative browning, is inhibited by sulfite.

Health Aspects and Tolerability

According to the European Food Safety Authority (EFSA) and the World Health Organization (WHO), E224 is considered safe when used within approved limits. However, there are important aspects to be aware of:

Intolerance and Allergies

A small proportion of the population, particularly individuals with asthma, may be sensitive to sulfites. Possible reactions include:

  • Respiratory symptoms and bronchospasm in asthma patients
  • Skin reactions such as redness or urticaria (hives)
  • Gastrointestinal irritation and nausea in sensitive individuals
  • In rare cases, anaphylactic reactions

Labeling Requirements

Foods containing sulfites at a concentration greater than 10 mg/kg or 10 mg/l must be labeled in the EU with the declaration sulfites or sulfur dioxide. This requirement also applies to E224.

ADI Value

The acceptable daily intake (ADI) for sulfites (expressed as SO₂) is set by WHO/JECFA at 0-0.7 mg per kg of body weight per day.

Regulatory Status in the EU

E224 is approved as a food additive in the European Union and is regulated under Regulation (EC) No 1333/2008 on food additives. Its permitted use is restricted to specific food categories and subject to maximum permitted levels.
