E237 refers to sodium formate (chemical formula: HCOONa), the sodium salt of formic acid. It is an approved food additive in the European Union, classified as a preservative. Sodium formate appears as a white, crystalline powder that is highly soluble in water and has a faintly acidic odour.
Sodium formate occurs naturally in small amounts in certain plants and insects. Industrially, it is primarily produced by reacting sodium hydroxide with carbon monoxide under elevated pressure and temperature. The resulting product is then purified and dried before use.
As a preservative, E237 inhibits the growth of bacteria, yeasts, and moulds in food products. The antimicrobial effect is based on the conversion of formate ions into undissociated formic acid in an acidic environment. This undissociated form can penetrate microbial cell membranes and disrupt cellular metabolism, thereby extending the shelf life of food.
Within the European Union, E237 is only permitted in a very limited number of specifically approved food categories. Its use is subject to strict maximum level regulations under EU Regulation No. 1333/2008 on food additives. In most common everyday food products, E237 is not authorised and is therefore rarely found on ingredient labels.
The European Food Safety Authority (EFSA) has evaluated sodium formate and concluded that it is safe for use in food when applied in accordance with the approved conditions and quantities. Formic acid and its salts are broken down via normal metabolic pathways in the human body. At very high doses, sodium formate can be toxic and may cause irritation to mucous membranes and eyes. However, at the concentrations permitted as a food additive, there is no relevant health risk for consumers.
Under EU food law, E237 must be declared in the ingredient list of a product either as E237 or as sodium formate. This allows consumers to identify whether a product contains this additive.
