As an approved food additive, it is primarily used as an acidity regulator, flavor enhancer, and pH-control agent. Malic acid can be obtained from natural sources or produced synthetically. The synthetic form typically exists as a racemate -- a mixture of two mirror-image forms (L- and D-malic acid) -- while the naturally occurring form is exclusively L-malic acid.

Natural Sources and Origin

Malic acid occurs widely in nature and is an intermediate in the citric acid cycle (Krebs cycle), a central metabolic pathway in the human body. It is found in particularly high concentrations in:
