E303, also known as potassium ascorbate or potassium L-ascorbate, is a food additive belonging to the group of antioxidants. It is the potassium salt of ascorbic acid (Vitamin C) and is used in the food industry to protect products from oxidative deterioration and to extend their shelf life.
Potassium ascorbate is formed by combining ascorbic acid (Vitamin C) with potassium hydroxide or potassium carbonate. The resulting compound is a white to off-white powder that is highly soluble in water. Compared to pure ascorbic acid, potassium ascorbate is less acidic, making it more suitable for certain food formulations where a lower acidity is desirable.

As an antioxidant, E303 prevents the oxidation of fats, vitamins, and pigments in food, thereby reducing rancidity, discolouration, and nutrient loss.
Potassium ascorbate acts as a free radical scavenger: it donates electrons to free radicals, thereby interrupting the oxidative chain reaction. It can also function as an oxygen scavenger by binding dissolved oxygen in food before it can cause damage. Since potassium ascorbate is broken down in the body into ascorbic acid and potassium ions, it also contributes to the body's Vitamin C supply.
E303 is considered safe and has been assessed as such by the European Food Safety Authority (EFSA) and the FAO/WHO. Since potassium ascorbate is the potassium salt of Vitamin C, it has a similar safety profile to Vitamin C itself. However, in high amounts, the elevated potassium content may be relevant for individuals with kidney disease or hyperkalaemia (elevated potassium levels in the blood). For healthy individuals, E303 is regarded as safe in the amounts typically found in food products.
In the ingredient lists of food products, E303 is listed either as E303 or as potassium ascorbate. As a derivative of Vitamin C, E303 is often perceived by consumers as a more natural additive.
