E304 is the European Union designation for ascorbyl palmitate, a synthetically produced, fat-soluble ester formed from ascorbic acid (vitamin C) and palmitic acid (a saturated fatty acid). As an approved food additive, E304 belongs to the category of antioxidants and is used to protect foods from oxidative spoilage and to extend their shelf life.
Ascorbyl palmitate is produced through the chemical esterification of ascorbic acid with palmitic acid. Although ascorbic acid occurs naturally in fruits and vegetables, the ester used as E304 is industrially synthesized. The resulting product is a white to yellowish powder that dissolves readily in fats and oils but is poorly soluble in water.
Ascorbyl palmitate acts as a free radical scavenger: it neutralizes free radicals generated by oxygen contact in fatty foods, which would otherwise cause rancidity, discoloration, and the degradation of vitamins and flavors. Because E304 is fat-soluble, it can act directly within the lipid phase of a food product — where water-soluble vitamin C (E300) provides insufficient protection.

E304 is considered safe by the relevant regulatory authorities, including the European Food Safety Authority (EFSA) and the WHO. No Acceptable Daily Intake (ADI) value has been established, as studies have not demonstrated any harmful effects. In the body, ascorbyl palmitate is broken down into ascorbic acid and palmitic acid, both of which are natural components of human metabolism.
Allergic reactions or intolerances to E304 are very rare and have barely been documented to date. Individuals with a known sensitivity to vitamin C derivatives should nonetheless check the ingredient lists of products.
In the European Union, E304 must be declared in the ingredient list in accordance with Food Information Regulation (EU) No 1169/2011, either as E304 or under the functional name antioxidant together with the E number.
