What is E400 (Alginic Acid)?

E400 refers to alginic acid, a naturally occurring polysaccharide extracted from brown seaweed species such as Macrocystis pyrifera and Laminaria. It belongs to the group of hydrocolloids and is used in the food industry as a thickener, gelling agent, and stabilizer. Within the European Union, it is approved under the designation E400.

Origin and Production

Alginic acid is industrially produced by extraction from dried brown seaweed. The algae contain alginic acid in their cell walls as a structural polysaccharide. After harvesting, the seaweed is dried, milled, and treated with alkaline solutions to dissolve the alginate. Subsequent acidification causes insoluble alginic acid to precipitate, which is then filtered and dried.

Properties and Mechanism of Action

Alginic acid is a linear polysaccharide composed of the monomer units mannuronic acid and guluronic acid. It is largely insoluble in water but swells strongly and can bind large amounts of water, making it an effective thickening agent. Its salts – the alginates (e.g., sodium alginate, E401) – are water-soluble and form stable gels in the presence of calcium ions.

Use in Food Products

E400 and related alginates are used in a wide range of food products:

  • Baked goods and dough products (to improve texture)
  • Dairy products such as yogurt and ice cream (as a stabilizer)
  • Sauces, dressings, and soups (as a thickener)
  • Cheese products and processed cheese
  • Instant products and ready meals
  • Meat and fish products (as a binding agent)

Medical and Pharmaceutical Applications

Alginic acid is also used outside the food industry:

  • Medicine: Alginic acid is an ingredient in some antacids and heartburn remedies. It forms a viscous foam in the stomach that acts as a physical barrier against gastric acid reflux.
  • Wound care: Alginate dressings are used to treat heavily exuding wounds, as they effectively absorb wound fluid and promote a moist wound environment.
  • Dentistry: Alginate impression materials are widely used to create dental impressions.
  • Pharmacy: Used as an excipient in tablets, capsules, and controlled-release drug delivery systems.

Safety and Tolerability

Alginic acid is considered safe and well tolerated. The European Food Safety Authority (EFSA) and the WHO/FAO have not established a specific ADI (Acceptable Daily Intake) value for alginic acid, indicating no toxicological concern at typical consumption levels. Alginic acid is not absorbed in the human gastrointestinal tract and is excreted unchanged. It is classified as a dietary fiber and may support digestive health.

Individuals with allergies to seafood or seaweed should exercise caution, although allergic reactions to alginic acid are rarely documented. Very high consumption may produce a mild laxative effect.

Labeling and Regulation

In the EU, E400 is approved under Regulation (EC) No 1333/2008 on food additives. Its use is restricted to specific food categories and must be declared on the product ingredient list either as alginic acid or as E400.
