What is E435?

E435, chemically known as Polysorbate 60 (also referred to as Polyoxyethylene Sorbitan Monostearate), is a synthetic emulsifier widely used in the food industry. It belongs to the polysorbate family and is derived from sorbitol, ethylene oxide, and stearic acid. As an emulsifier, E435 prevents the separation of water and fat phases in food products, helping to achieve a creamy and consistent texture.

Production and Chemical Properties

Polysorbate 60 is produced by esterifying sorbitol with stearic acid, followed by treatment with ethylene oxide. The result is a yellowish, waxy substance with both fat-soluble and water-soluble properties. This so-called amphiphilic structure makes it a highly effective emulsifier and stabilizer in water-fat systems.

Uses in Food Products

E435 is used in a wide range of processed foods, including:

  • Baked goods and cakes (improves volume and softness)
  • Desserts and puddings
  • Whipped cream substitutes and topping creams
  • Ice cream (prevents crystal formation)
  • Margarine and dressings
  • Instant soups and sauces

It improves texture, extends shelf life, and ensures an appealing consistency in processed food products.

Regulatory Approval

In the European Union, E435 is approved under Food Additives Regulation (EC) No. 1333/2008. The European Food Safety Authority (EFSA) has established a joint Acceptable Daily Intake (ADI) of 10 mg per kilogram of body weight per day for polysorbates (E432–E436). Permitted maximum levels vary by food category and typically range from 1,000 to 10,000 mg/kg. In the United States, Polysorbate 60 is listed as Generally Recognized As Safe (GRAS) by the FDA.

Safety and Health Assessment

E435 is considered safe for human consumption when used within approved limits. However, recent research has prompted ongoing scientific monitoring:

  • Some animal studies suggest that high intake of polysorbates may influence the gut microbiome and promote intestinal inflammation.
  • Individuals with known hypersensitivities to polysorbates or related compounds should avoid E435.
  • The EFSA last evaluated the safety of polysorbates in 2015 and found no immediate health risks at normal dietary intake levels.

People with sorbitol intolerance or a polysorbate sensitivity should carefully read product labels, as E435 also appears in certain cosmetic products and pharmaceutical preparations.

E435 in Cosmetics and Pharmaceuticals

Beyond the food industry, Polysorbate 60 is also used in cosmetics (e.g., as a solubilizer in creams and lotions) and in pharmaceutical formulations (e.g., as an excipient in tablets and injectable solutions). These applications are subject to their own regulatory standards and concentration limits.

Identification on Product Labels

In the EU, E435 must be declared on food ingredient lists either as E435 or as Polysorbate 60. Consumers wishing to monitor their emulsifier intake can use these designations to identify the additive in food products.
