What is E442?

E442 is the European food additive number for ammonium phosphatides. It is a synthetically produced emulsifier derived from plant-based fatty acids (typically rapeseed oil) and ammonium phosphate. E442 is approved as a food additive in the European Union and is primarily used in the chocolate and cocoa industry.

Function and Application

Ammonium phosphatides act as emulsifiers, meaning they enable the uniform blending of fats and other ingredients that would otherwise not mix together. In chocolate production, E442 ensures that the cocoa mass achieves a smooth, workable consistency and does not become too viscous.

Origin and Production

E442 is typically derived from rapeseed oil. The fatty acids from the oil are reacted with glycerophosphoric acid and then with ammonia to produce ammonium phosphatides. The final product is free from genetically modified organisms when certified raw materials are used. E442 is considered an alternative to the commonly used soy lecithin (E322), particularly for individuals with a soy allergy.

Safety and Health Assessment

The European Food Safety Authority (EFSA) has classified E442 as safe. No adverse health effects have been identified at typical dietary intake levels. The additive is broken down in the body into its components and metabolised normally.
