What is E492?

E492, known as sorbitan tristearate, is a synthetic food emulsifier derived from sorbitol and stearic acid (a saturated fatty acid). It belongs to the group of sorbitan fatty acid esters and is widely used in the food industry to blend water and fat, improve texture and consistency, and extend the shelf life of various products.

Properties and Mechanism of Action

Sorbitan tristearate is a lipophilic emulsifier, meaning it is predominantly fat-soluble. Its HLB value (Hydrophilic-Lipophilic Balance) is approximately 2.1, making it particularly suitable for stabilising water-in-oil emulsions. Compared to other sorbitan emulsifiers, E492 has a firmer, waxy consistency, which favours its use in fat-rich food products.

The mechanism of action is based on the dual nature of its molecule, which contains both a hydrophilic (water-attracting) and a lipophilic (fat-attracting) portion. At the interface between water and fat, E492 positions itself and reduces surface tension, thereby forming stable emulsions.

Use in Food Products

E492 is used in a wide range of food products and applications, including:

  • Baked goods: Improves dough structure and extends freshness.
  • Chocolate and chocolate coatings: Prevents fat crystallisation and ensures a uniform gloss.
  • Margarine and fat-based products: Stabilises the emulsion and improves spreadability.
  • Chewing gum: Acts as a softener and texture improver.
  • Confectionery and caramel: Prevents fat bloom and improves consistency.
  • Instant dry products: Enhances the wettability and solubility of powders.

Regulatory Approval

In the European Union, E492 is approved as a food additive under Regulation (EC) No 1333/2008. The European Food Safety Authority (EFSA) has evaluated E492 and classified it as safe when used within the established maximum limits. In the United States, sorbitan tristearate is recognised by the FDA as Generally Recognized as Safe (GRAS).

Safety and Health Assessment

Sorbitan tristearate is considered safe for consumption when used as intended. It is only minimally absorbed in the intestine and is largely excreted unchanged. No clinically relevant adverse effects or toxicity have been identified at typical dietary intake levels.

However, individuals with a known hypersensitivity to sorbitan esters should exercise caution. In very high amounts, E492, like other sorbitan derivatives, may have a mild laxative effect, as undigested sorbitol is osmotically active in the large intestine.

Labelling Requirements

In the EU, E492 must be declared in the ingredient list of food products, either under the name sorbitan tristearate or the E-number E492. This enables consumers to identify the additive and make informed purchasing decisions.
