In the food industry, E493 is used to bind water and fat together, creating stable emulsions and improving product consistency.

Production and Chemical Properties

Sorbitan monolaurate is produced through the chemical reaction of the sugar alcohol sorbitol with lauric acid, a medium-chain saturated fatty acid. The resulting compound is fat-soluble and has amphiphilic properties, meaning it contains both water-attracting and fat-attracting molecular regions. This dual nature allows E493 to act as a surfactant, stabilising two phases that would not normally mix, such as oil and water.

Uses in the Food Industry

E493 is used in a wide range of food products, including:

  • Baked goods: Improving dough texture and extending freshness
  • Confectionery and chocolate: Stabilising fat coatings and preventing fat bloom
  • Margarines and fat preparations: Homogenising fat-water mixtures
  • Flavourings and food flavour systems: Emulsifying flavour carriers

Regulatory Approval

E493 is approved in the European Union under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has assessed sorbitan monolaurate and confirmed its safety for use in specific food categories when used within the defined maximum permitted levels. In many applications, it is used under the principle of quantum satis, meaning it is applied only in the amount technically necessary to achieve the desired effect.

Safety and Health Assessment

Sorbitan monolaurate is considered safe for consumption when used as intended. Both the EFSA and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) have reviewed the compound. Since E493 is only minimally absorbed in the intestine and is largely excreted through the faeces, systemic exposure is low. At very high doses, mild gastrointestinal irritation may occur, but this is not relevant at the amounts typically used in food products.

Allergies and Intolerances

No specific allergic reactions to E493 have been documented in the general population. However, individuals with known sensitivity to sorbitan esters should check ingredient labels carefully. As lauric acid can be derived from coconut oil or palm kernel oil, a reaction in individuals with sensitivities to these source materials is theoretically possible, though rare.

Foods containing E493 must list this additive in the ingredients, either as E493 or as sorbitan monolaurate. This allows consumers to make informed choices about the products they purchase.
