What is E512?

E512 is the European designation for stannous chloride, also known as tin(II) chloride. It is an inorganic tin compound used in the food industry as an antioxidant and colour stabiliser. The substance prevents oxidation in food products, helping to preserve their colour and overall quality during storage and processing.

Use in Food Products

E512 is primarily used in canned white or pale asparagus to maintain the natural light colour of the vegetable and prevent unwanted discolouration caused by oxidation. In the European Union, the use of E512 is restricted to a limited number of specific applications and is subject to strict maximum permitted levels under Regulation (EC) No 1333/2008 on food additives.

Mechanism of Action

Stannous chloride acts as a reducing agent. It donates electrons, thereby preventing the oxidation of sensitive molecules within the food. This effectively inhibits colour changes that occur upon contact with oxygen. Additionally, E512 can bind certain metal ions that act as catalysts for oxidative processes, neutralising their damaging effects on food quality.

Safety and Health Assessment

The European Food Safety Authority (EFSA) has assessed E512 and concluded that, when used as intended within the approved maximum levels, it is considered safe for human consumption. Tin is a natural trace component found in many foods in very small amounts. However, excessive intake of tin compounds may cause gastrointestinal complaints such as nausea, vomiting, or diarrhoea.

Labelling and Regulation

In the EU, E512 must be declared on the ingredient list of packaged foods in accordance with food labelling regulations, either as E512 or as stannous chloride. The permitted maximum levels are established in EU food additive Regulation (EC) No 1333/2008. In some countries outside the EU, E512 is not approved or is subject to more restrictive conditions of use.
