What is E555?

E555 is the European designation for potassium aluminium silicate, an inorganic mineral belonging to the silicate group. It is approved as a food additive and classified as an anti-caking agent and release agent. The substance occurs naturally in various minerals and is either sourced from natural deposits or synthetically produced for use in food applications.

Uses in Food

E555 is primarily used to prevent the clumping of powdered or granulated food products. Typical applications include:

  • Table salt and salt substitutes
  • Powdered spice blends
  • Dry soups and instant products
  • Cheese products (as a surface release agent)
  • Powdered dietary supplements

As an anti-caking agent, E555 absorbs moisture and keeps powders free-flowing. As a release agent, it prevents food components from sticking together or to processing surfaces.

Chemical Properties

Potassium aluminium silicate is a white to off-white, odourless and tasteless powder. It is practically insoluble in water. Its chemical structure is based on a three-dimensional network of silicon and aluminium atoms linked by oxygen bridges, with potassium ions providing charge balance. The simplified formula ranges from KAlSi3O8 to KAlSi2O6 depending on the crystal structure.

Safety and Health Assessment

Both the European Food Safety Authority (EFSA) and the Joint FAO/WHO Expert Committee on Food Additives (JECFA) have evaluated E555. It is considered safe when used as intended, as the substance is poorly absorbed in the gastrointestinal tract and passes through the body largely unchanged.

  • No acceptable daily intake (ADI) has been established, as no health concerns exist under normal dietary conditions.
  • The aluminium content of E555 is toxicologically relevant: prolonged high intake may lead to aluminium accumulation in the body. Individuals with impaired kidney function should be cautious about excessive intake of aluminium-containing additives.
  • For healthy individuals, E555 is considered safe at permitted use levels.

Regulation in the EU

In the European Union, E555 is authorised under Regulation (EC) No 1333/2008 on food additives. Its use is restricted to specific food categories, and maximum permitted levels apply. On food labels, E555 must be declared either by its name (potassium aluminium silicate) or its E-number.
