E577 refers to the food additive potassium gluconate, the potassium salt of gluconic acid. It is a naturally occurring organic compound that can be produced through the fermentation of glucose. Potassium gluconate appears as a white to slightly yellowish crystalline or powdered solid and is readily soluble in water.

Function and Use in Food

In the food industry, E577 is primarily used as a sequestrant (chelating agent) and stabiliser. Sequestrants bind free metal ions such as calcium, magnesium, or iron within food products, thereby preventing unwanted chemical reactions such as oxidation, discolouration, or flavour changes. This extends the shelf life and maintains the quality of food products.

No specific ADI (Acceptable Daily Intake) value has been established for E577, as it is classified as substantially harmless under normal conditions of use.

Potassium gluconate is metabolised in the body into gluconate and potassium ions. Gluconate is excreted via the kidneys, while potassium, as an essential mineral, is utilised by the body. No adverse health effects are known at the amounts typically ingested through food.

People with Kidney Disease

Individuals with impaired kidney function should monitor their potassium intake, as the body may not be able to excrete potassium efficiently in cases of kidney disease. Elevated potassium levels in the blood (hyperkalaemia) can pose health risks in such circumstances.

Approval and Labelling

In the European Union, E577 is authorised under Regulation (EC) No 1333/2008 on food additives. It may be used in specific food categories in technologically necessary amounts. On the ingredient list of processed products, the substance is declared either as E577 or as potassium gluconate.
