What is E632?

E632, known as dipotassium inosinate, is a food additive classified as a flavor enhancer. It is the dipotassium salt of inosinic acid (IMP – inosine-5-monophosphate), a naturally occurring compound produced in the body during the breakdown of purines. E632 is used in the food industry to intensify the savory umami taste of food products.

Origin and Production

Dipotassium inosinate can be derived from both animal and plant sources. Industrially, it is commonly produced through fermentation processes or chemical synthesis. Because it may originate from animal sources (such as meat or fish), it may not be suitable for vegans and vegetarians. The specific source is generally not disclosed on product packaging.

Use in Food Products

E632 is frequently used in combination with other flavor enhancers such as E621 (monosodium glutamate) and E631 (disodium inosinate), as this combination produces a synergistic enhancement of the umami flavor. Typical foods containing E632 include:

  • Ready meals and instant soups
  • Seasoning blends and bouillon cubes
  • Snacks and potato chips
  • Sauces and dressings
  • Frozen food products

Safety and Health Assessment

The European Food Safety Authority (EFSA) has classified E632 as safe for human consumption when used within the established maximum levels. The additive is approved in the European Union under Regulation (EC) No. 1333/2008 on food additives.

Possible Intolerances

In sensitive individuals, inosinate-based flavor enhancers may trigger symptoms such as headaches, skin flushing, or gastrointestinal discomfort when consumed in larger quantities. People suffering from gout or elevated uric acid levels should limit consumption of foods containing E632, as inosinate is metabolized to uric acid and may raise uric acid levels in the blood.

Notes for Specific Population Groups

  • Gout patients: Reduced consumption is recommended, as purine metabolism may be adversely affected.
  • Infants and toddlers: E632 is not permitted in baby and toddler food products.
  • Vegans and vegetarians: Caution is advised, as the source may be of animal origin.
  • People with asthma: In rare cases, a potential link to worsening asthma symptoms has been reported.

Labeling Requirements

In the European Union, food products containing E632 must list this additive in the ingredients list either by its E-number (E632) or by its name dipotassium inosinate. Labeling as a flavor enhancer is also mandatory.
