E942 is the European Union designation for nitrous oxide (chemical formula: N₂O), a colourless, slightly sweet-smelling gas. In the food industry, it is primarily used as a propellant gas. It is best known for its use in pressurised whipped cream canisters, where it dissolves into the fat-rich cream under pressure and rapidly expands upon release to create a light, airy foam.

Applications in Food

E942 is used mainly as a propellant and packaging gas in the following areas:

Pressurised whipped cream: The gas dissolves in the cream and, when the pressure is released, it expands instantly to produce the characteristic foam texture.
Protective packaging: Used as a cover gas to extend the shelf life of sensitive food products.
Molecular gastronomy: Used in cream whippers (ISI siphons) to create foams and espumas.

Chemical Properties and Mechanism of Action

Nitrous oxide (N₂O) is a stable, non-flammable gas with good fat solubility, making it well suited as a propellant for cream-based products. When dissolved in fat under pressure and then rapidly depressurised as it exits the canister, the gas expands abruptly, creating the creamy foam structure associated with whipped cream products.

Regulatory Approval and Safety

E942 is approved for use in the European Union under Regulation (EC) No 1333/2008 on food additives. The European Food Safety Authority (EFSA) has assessed nitrous oxide as safe when used in approved quantities as a food additive. At the levels present after intended use in food products, the residual gas that enters the body is negligible.

Health Considerations

When used as intended in food applications, E942 is considered safe. However, the following points are worth noting:

Recreational misuse: Nitrous oxide is increasingly misused as a recreational drug (so-called laughing gas cartridges). This can cause serious health consequences, including oxygen deprivation, nerve damage (through inhibition of vitamin B12 activation), and in extreme cases, death.
Occupational exposure: Chronic exposure to high concentrations of N₂O -- as may occur in medical or dental settings -- has been associated with an increased risk of neurological damage and reproductive issues.
Food safety: The trace amounts of N₂O remaining in food after proper use are minimal and pose no known health risk to consumers.

Labelling

Foods containing E942 must list it in their ingredient declaration, either as E942 or as nitrous oxide. There are no specific allergen or intolerance labelling requirements associated with this additive.
