Die glykämische Last (GL) ist ein Maß dafür, wie stark ein Lebensmittel den Blutzuckerspiegel beeinflusst.
Bei der GL werden sowohl der glykämische Index (GI) als auch die Menge der enthaltenen Kohlenhydrate pro Portion berücksichtigt. Im Gegensatz zum GI beschreibt die GL den tatsächlichen Effekt einer realen Portion und liefert somit eine praxisnahe Bewertung.
Berechnet wird die glykämische Last mit der Formel: GL = (GI × verfügbare Kohlenhydrate in g) / 100
Ein Wert unter 10 gilt als niedrig, 11–19 als mittel, ab 20 als hoch. Lebensmittel mit niedriger GL wirken sich weniger stark auf den Blutzucker aus und können helfen, Insulinspitzen zu vermeiden, das Energielevel zu stabilisieren und das Diabetesrisiko zu senken.
Eine Ernährung mit niedriger glykämischer Last kann vor allem bei Typ-2-Diabetes, Insulinresistenz, PCOS und Übergewicht hilfreich sein. Sie umfasst ballaststoffreiche Lebensmittel, Vollkorn, Hülsenfrüchte, Nüsse, Gemüse und Proteinquellen.
