Histamine intolerance occurs when the body cannot properly break down excess histamine, often due to reduced activity of the enzyme diamine oxidase (DAO), which can lead to symptoms such as headaches, skin rashes or indigestion. In particular, foods that ripen for a long time or are stored for a long time have a high content of histamine and other biogenic amines. In addition, a number of foods act as so-called histamine liberators, as they also release histamine in the intestine. In particular, the combined consumption of foods with a high histamine content, such as alcohol and cheese, can contribute to an increase in histamine levels in the body.
