Kombucha ist ein fermentiertes Getränk, das traditionell aus gesüßtem Schwarz- oder Grüntee und einem mikrobiellen Kombucha-Pilz (SCOBY) hergestellt wird.
Während des Fermentationsprozesses wandeln Hefen und Bakterien den Zucker in organische Säuren, Kohlensäure, geringe Mengen Alkohol und bioaktive Stoffe um. Dadurch entsteht ein leicht säuerliches, prickelndes Getränk mit probiotischer Wirkung.
Die im Kombucha enthaltenen lebenden Mikroorganismen können zur Stärkung der Darmflora beitragen und so Verdauung, Immunsystem und möglicherweise auch das allgemeine Wohlbefinden unterstützen. Zusätzlich liefert Kombucha sekundäre Pflanzenstoffe aus dem Tee, darunter Polyphenole mit antioxidativen Eigenschaften.
Kombucha ist mittlerweile auch in vielen Supermärkten in verschiedenen Geschmacksrichtungen erhältlich, wird aber auch gerne selbst hergestellt. Wichtig ist dabei eine hygienische Zubereitung, da es bei unsachgemäßer Herstellung zu Verunreinigungen kommen kann.
