Mate (Ilex paraguariensis) is a traditional herbal infusion from South America, made from the leaves of the holly species Ilex paraguariensis. It is especially popular in Argentina, Uruguay, Paraguay and Brazil – and has become increasingly known in Europe as a natural energizer.

Its stimulating effect comes from its caffeine content (also called mateine), which is gentler but longer-lasting than that of coffee. Mate also contains numerous bioactive compounds such as polyphenolssaponinsflavonoids, and theobromine, which can have antioxidant, anti-inflammatory, and cell-protective effects.

In natural medicine, mate is valued for enhancing physical and mental performancesupporting digestioncurbing appetite during diets, and stimulating metabolism. The bitter compounds it contains also promote bile flow, which can aid digestion.

Mate is traditionally consumed from a gourd with a metal straw (bombilla), but is also available as teabags, capsules or extracts.
