Mineral oil hydrocarbons may unintentionally enter food products through packaging materials, lubricants, or during production processes. A distinction is made between MOSH (mineral oil saturated hydrocarbons) and MOAH (mineral oil aromatic hydrocarbons), which have different biological impacts.

MOSH accumulate in fatty tissue and organs such as the liver, spleen, and lymph nodes. Their long-term health effects are still under investigation. In contrast, MOAH are of particular concern, as they may contain carcinogenic compoundsthat pose significant health risks.

To protect consumers, the European Union has not set binding maximum levels but follows the recommendations of EFSA. Food monitoring and improved packaging materials help reduce contamination. Consumers are advised to choose quality-assured products and avoid long storage periods.
