Phosphor ist ein essenzieller Mineralstoff, der im menschlichen Körper vor allem in Form von Phosphat vorkommt.
Rund 85 % des Phosphors befinden sich in den Knochen und Zähnen, wo er gemeinsam mit Calcium die Festigkeit des Skeletts sichert. Doch auch auf zellulärer Ebene spielt Phosphor eine zentrale Rolle, etwa bei der Energiegewinnung (ATP), der Zellmembranstabilität (Phospholipide) und der pH-Regulation.
Der tägliche Bedarf liegt für Erwachsene laut DGE bei etwa 700 mg pro Tag. Gute Quellen sind Milchprodukte, Fleisch, Fisch, Hülsenfrüchte, Vollkornprodukte und Nüsse. In der Lebensmittelindustrie wird Phosphat auch als Zusatzstoff (E 338–E 341) verwendet, etwa in Backwaren, Cola-Getränken oder Schmelzkäse.
Ein Phosphormangel ist selten, kann aber bei bestimmten Erkrankungen (z. B. Malabsorptionssyndromen, alkoholbedingter Mangelernährung oder Diabetes) auftreten. Umgekehrt kann ein Überschuss an Phosphat, etwa durch chronische Nierenerkrankungen oder übermäßigen Konsum phosphathaltiger Lebensmittel, das Risiko fü Gefäßverkalkung und Knochenschwund erhöhen.
