Roter Reis, auch als fermentierter roter Reis bekannt, entsteht durch die Fermentation von weißem Reis mit dem Schimmelpilz Monascus purpureus.
Die Fermentation verleiht dem Reis seine charakteristische rote Farbe und führt zur Bildung verschiedener sekundärer Stoffwechselprodukte. Roter Reis wird traditionell in der asiatischen Küche verwendet und findet seit einigen Jahrzehnten auch im ernährungswissenschaftlichen und medizinischen Kontext Beachtung.
Besondere Aufmerksamkeit erhält roter Reis aufgrund seines Gehalts an Monacolinen, insbesondere Monacolin K, das strukturell mit Lovastatin identisch ist. Monacoline beeinflussen den Cholesterinstoffwechsel, indem sie ein zentrales Enzym der körpereigenen Cholesterinsynthese hemmen. Aus diesem Grund wird roter Reis häufig im Zusammenhang mit erhöhten Cholesterinwerten diskutiert. Die Konzentration der wirksamen Substanzen kann jedoch stark variieren und ist abhängig von Fermentationsbedingungen und Produktqualität.
Neben den Monacolinen enthält roter Reis weitere bioaktive Bestandteile wie Pigmente, ungesättigte Fettsäuren und Sterole. Gleichzeitig ist zu beachten, dass bei unsachgemäßer Herstellung das Mykotoxin Citrinin entstehen kann, das potenziell nierenschädigend wirkt. Aus diesem Grund unterliegen Produkte mit rotem Reis in vielen Ländern strengen regulatorischen Vorgaben, insbesondere hinsichtlich Dosierung, Reinheit und Kennzeichnung.
