What is Saffron?
Saffron (Crocus sativus) is one of the most expensive and rare spices in the world. It is obtained from the dried stigma threads of the saffron plant, which belongs to the iris family (Iridaceae). Originally from the Middle East, saffron is today cultivated primarily in Iran, Spain, India, and Greece. For thousands of years, saffron has been used in traditional medicine across many cultures – both as a culinary spice and as a medicinal remedy.
Active Compounds and Constituents
The medicinal effects of saffron are attributed to several key bioactive compounds:
- Crocin and Crocetin: Carotenoids responsible for the vivid yellow-red color, with potent antioxidant properties.
- Safranal: The essential oil that gives saffron its characteristic aroma and has demonstrated neuroprotective effects.
- Picrocrocin: Responsible for the bitter taste and also exhibits antioxidant properties.
- Kaempferol: A flavonoid with anti-inflammatory properties.
Biological Effects and Areas of Application
Mood and Mental Health
Saffron extract has shown antidepressant effects in several clinical trials, comparable to certain antidepressant medications. It is believed that saffron increases the availability of serotonin in the brain, contributing to mood improvement. Studies have examined daily doses of 30 mg of saffron extract.
Antioxidant and Anti-Inflammatory Effects
The carotenoids present in saffron – particularly crocin and crocetin – act as powerful antioxidants and can reduce oxidative stress in the body. This may help prevent chronic conditions such as cardiovascular disease and diabetes.
Cognitive Function
Emerging research suggests that saffron exerts neuroprotective effects and may slow cognitive decline in older adults. Some studies have investigated its use in Alzheimer's disease with promising results.

There is evidence that saffron may improve visual function in age-related macular degeneration, attributed to its antioxidant activity.
Blood Sugar and Cardiovascular Health

Recommended Dosage
Clinical studies have typically used 30 mg of saffron extract per day. As a culinary spice in normal dietary amounts, saffron is considered safe. However, excessive intake (from approximately 5 grams onward) can be toxic and should be avoided.
Safety and Side Effects
Saffron is considered safe in food-relevant quantities. At higher doses, the following side effects may occur:
- Fatigue and dizziness
- Mood changes
- Gastrointestinal complaints
- In very high doses: uterine stimulation (therefore not recommended in high doses during pregnancy)
Individuals taking blood thinners or antidepressants should consult their physician before taking saffron supplements.
