Natriumcitrat ist das Natriumsalz der Zitronensäure und wird häufig als Lebensmittelzusatzstoff (E331) verwendet.
Natriumcitrat besitzt eine basenbildende Wirkung und spielt eine wichtige Rolle bei der Regulierung des pH-Werts im Körper. Es wird oft als Antioxidans, Konservierungsmittel und pH-Regulator in der Lebensmittelindustrie sowie in pharmazeutischen und medizinischen Anwendungen eingesetzt. Es ist auch Bestandteil von Sportgetränken, da es die Elektrolyt- und Flüssigkeitsbalance im Körper unterstützen kann.
Die basenbildende Wirkung bedeutet, dass es dazu beitragen kann, den pH-Wert im Blut zu stabilisieren und eine Übersäuerung des Körpers zu verhindern. Dies macht es besonders hilfreich bei der Behandlung von Azidose, einer Erkrankung, die durch einen zu niedrigen pH-Wert im Blut charakterisiert ist. In Kombination mit Kalium und Magnesium wird Natriumcitrat häufig in Infusionen eingesetzt, um Elektrolytstörungen zu behandeln und den Flüssigkeitshaushalt auszugleichen.
In der Sporternährung ist Natriumcitrat als pH-Regulator und Leistungssteigerer bekannt. Studien haben gezeigt, dass es die Laktatbildung während intensiver sportlicher Belastung reduzieren kann, wodurch die Ausdauerleistung verbessert wird. Darüber hinaus wird es in der Medizin auch als Blutverdünner und zur Prophylaxe von Nierensteinen eingesetzt.
