Sulforaphan ist ein sekundärer Pflanzenstoff aus der Gruppe der Isothiocyanate, der vor allem in Brokkoli, Brokkolisprossen, Kohlrabi und anderen Kreuzblütlern vorkommt.
Beim Zerkleinern der Pflanze entsteht Sulforaphan aus der Vorstufe Glucoraphanin, das durch das Enzym Myrosinase aktiviert wird. Sulforaphan ist einer der am besten untersuchten sekundären Pflanzenstoffe und zeigt zellschützende, entzündungshemmende sowie potenziell krebshemmende Effekte.
Wissenschaftliche Studien belegen, dass Sulforaphan eine zentrale Rolle bei der Aktivierung körpereigener Entgiftungsenzyme spielt, insbesondere in der Leber. Es hemmt oxidative Stressprozesse und unterstützt den Schutz der DNA vor Zellschäden. In der Krebsforschung zeigt Sulforaphan unter anderem antiproliferative Eigenschaften (Hemmung der Ausbreitung von Zellen), kann Krebszellen am Wachstum hindern und die Wirkung von Chemotherapeutika positiv beeinflussen.
Um den maximalen Effekt zu erzielen, empfehlen sich Brokkolisprossen, die teils ein Vielfaches an Glucoraphanin enthalten im Vergleich zu ausgewachsenem Brokkoli. Für eine optimale Bioverfügbarkeit sollten sie roh verzehrt oder nur leicht gedämpft werden, da hohe Temperaturen die empfindliche Myrosinase zerstören. Alternativ sind standardisierte Sulforaphan-Supplemente erhältlich, die sich besonders bei therapeutischer Anwendung eignen.
