Die Tonkabohne ist der Samen des Tonkabaums und wird wegen ihres intensiven, süßlich-würzigen Aromas als geschmacksgebende Zutat verwendet.
Die Tonkabohne stammt ursprünglich aus Mittel- und Südamerika und zeichnet sich durch ein charakteristisches Aroma aus, das an Vanille, Mandel, Karamell und Heu erinnert. Verantwortlich dafür ist vor allem der natürliche Inhaltsstoff Cumarin. Aufgrund dieser aromatischen Eigenschaften wird die Tonkabohne seit Langem in der Küche und in der Parfümherstellung geschätzt. Botanisch handelt es sich nicht um eine Bohne im klassischen Sinn, sondern um den Samen der Frucht des Tonkabaums.
In der Praxis wird die Tonkabohne vor allem sparsam eingesetzt. Sie findet Verwendung in Desserts, Süßspeisen, Eis, Backwaren und gelegentlich auch in herzhaften Gerichten. Meist wird sie fein gerieben oder als Aromaextrakt genutzt. Auch in der Lebensmittelindustrie sowie in der Kosmetik- und Duftstoffherstellung spielt sie eine Rolle. Aufgrund ihres intensiven Geschmacks reicht bereits eine sehr kleine Menge aus.
Der Umgang mit der Tonkabohne erfordert Zurückhaltung, da Cumarin in größeren Mengen gesundheitlich problematisch sein kann. In Lebensmitteln ist ihr Einsatz daher reguliert und mengenmäßig begrenzt. In haushaltsüblichen Mengen gilt die Tonkabohne als unbedenklich. Sie ist vegan, glutenfrei und wird nicht als klassisches Gewürz, sondern eher als Aromazutat eingeordnet.
