What is Beta-Glucan?

Beta-glucan (also written as beta glucan or ß-glucan) is a naturally occurring dietary fiber belonging to the group of polysaccharides -- long-chain carbohydrates made up of many linked sugar molecules. Beta-glucan is found primarily in the cell walls of cereals such as oats and barley, as well as in certain mushrooms (e.g., Shiitake, Maitake, Reishi), yeasts, and some bacteria.

Depending on its origin, the chemical structure and biological properties of beta-glucan differ. Beta-glucans from oats and barley are particularly well known for their heart-protective and blood sugar-regulating effects, while mushroom- and yeast-derived beta-glucans primarily exhibit immunomodulatory properties.

Biological Functions and Mechanism of Action

Beta-glucan acts on several levels within the human body:

  • Immune modulation: Beta-glucans from mushrooms and yeasts bind to specific receptors on immune cells (e.g., Dectin-1, CR3), increasing the activity of macrophages, natural killer cells, and dendritic cells. This supports the body´s natural defenses against pathogens.
  • Cholesterol reduction: Soluble beta-glucans from oats and barley bind to bile acids in the intestine, preventing their reabsorption. This forces the liver to use more cholesterol to produce new bile acids, thereby lowering LDL cholesterol levels in the blood.
  • Blood sugar regulation: As a soluble fiber, beta-glucan slows gastric emptying and the absorption of glucose in the small intestine. This results in a more gradual rise in blood sugar levels after meals.
  • Gut health: Beta-glucan acts as a prebiotic, promoting the growth of beneficial gut bacteria (e.g., Bifidobacterium, Lactobacillus), which supports the gut microbiome and overall digestive health.

Medical Applications

Cardiovascular Health

The European Food Safety Authority (EFSA) has confirmed that a daily intake of at least 3 g of oat or barley beta-glucan demonstrably lowers blood cholesterol levels and thus contributes to heart health. This amount is found in approximately 60 g of oatmeal, for example.

Diabetes and Blood Sugar Regulation

Several clinical studies show that beta-glucan reduces postprandial blood sugar and insulin spikes. This is particularly relevant for people with type 2 diabetes or those at elevated risk of developing the condition.

Immune Support

Beta-glucans from mushrooms and yeasts are used in dietary supplements and complementary medicine to support immune function. In some oncological contexts (e.g., in Japan with the mushroom extract Lentinan), they are being investigated as adjuvant therapies alongside cancer treatment.

Skin Health

Topically applied beta-glucan (commonly listed as beta-glucan 1,3/1,6 in cosmetics) has moisturizing and wound-healing properties. It is used in skincare products to reduce the appearance of wrinkles and to soothe irritated skin.

Dietary Sources

Beta-glucan occurs naturally in the following foods:

  • Oats and oat-based products (rolled oats, oat bran, oat milk)
  • Barley and barley-based products
  • Rye and wheat (in smaller amounts)
  • Edible mushrooms such as Shiitake, Maitake, Reishi, and oyster mushrooms
  • Yeast (e.g., baker's yeast)

Recommended Intake

For the cholesterol-lowering effect, EFSA recommends a daily intake of at least 3 g of beta-glucan from oats or barley. For immunological effects, dietary supplements often use dosages between 250 mg and 1,000 mg per day, with the optimal dose varying depending on the product and intended use.

Safety and Interactions

Beta-glucan from food sources is considered very safe and well tolerated. When taken as a dietary supplement in higher doses, mild digestive discomfort such as bloating or loose stools may occasionally occur, especially at the beginning of supplementation. People with autoimmune conditions should consult a doctor before taking immune-stimulating beta-glucan supplements, as excessive immune activation is theoretically possible.

Interactions with medications are not known at food-typical amounts. When taking immunosuppressant drugs, the use of mushroom-derived beta-glucan supplements should be discussed with a healthcare provider.
