What is E261 (Potassium Acetate)?

E261 refers to potassium acetate, the potassium salt of acetic acid. It is an approved food additive in the European Union, used as a preservative, acidity regulator, and buffering agent. In its pure form, potassium acetate is a white, crystalline, hygroscopic powder with a faintly vinegar-like odour.

Chemical Properties

Potassium acetate has the chemical formula CH₃COOK and is produced by neutralising acetic acid with potassium hydroxide or potassium carbonate. It is highly soluble in water and produces an aqueous solution with a pH of approximately 7 to 9. As a potassium salt, it supplies the mineral potassium, which is essential for numerous bodily functions.

Use in Food Products

In the food industry, E261 serves several technological purposes:

  • Preservation: Inhibits the growth of bacteria and moulds, thereby extending the shelf life of food products.
  • Acidity regulation: Adjusts and stabilises the pH value of food products.
  • Buffering: Keeps the acidity within a defined range, which influences both flavour and texture.
  • Flavour enhancement: Can round out and enhance the characteristic taste of food products.

Typical applications include baked goods, cheese products, fish products, delicatessen items, ready meals, and condiment sauces.

Safety and Health Assessment

Potassium acetate is considered safe for human consumption by the European Food Safety Authority (EFSA) when used in approved quantities. No specific Acceptable Daily Intake (ADI) value has been established, as the substance is regarded as safe under normal dietary exposure.

Since potassium acetate is a source of potassium, individuals with impaired kidney function or hyperkalaemia (elevated blood potassium levels) should monitor their intake of potassium-rich foods. For healthy individuals, typical dietary exposure poses no known risk.

Labelling and Regulation

Under EU food additive regulation (EC) No 1333/2008, E261 must be declared in the ingredient list of food products either as E261 or as potassium acetate. The maximum permitted use levels vary by food category and are defined in the relevant EU legislation.

E261 Compared to Related Additives

E261 belongs to the acetate group of food additives, which also includes E260 (acetic acid), E262 (sodium acetate), and E263 (calcium acetate). Unlike sodium acetate (E262), potassium acetate contains no sodium, making it particularly suitable for sodium-reduced product formulations. The preserving and buffering properties are broadly similar across all acetates.
