What is E300?

E300 is the official European Union designation for ascorbic acid, widely known as Vitamin C. As an approved food additive, E300 is primarily used in the food industry as an antioxidant and preservative. The substance is chemically identical to the Vitamin C naturally found in fruits and vegetables and is considered one of the most widely used and well-tolerated food additives in the world.

Origin and Production

Ascorbic acid can be derived from natural plant-based sources or produced synthetically. The industrially used ascorbic acid (E300) is mainly manufactured through chemical synthesis or microbial fermentation. Despite its synthetic origin, it is chemically identical to its natural counterpart and is absorbed and metabolized by the body in exactly the same way.

Function and Applications

E300 fulfills several technological functions in food products:

  • Antioxidant: E300 prevents the oxidation of fats, oils, and other sensitive ingredients, thereby protecting the color, flavor, and nutritional value of food.
  • Preservative: By inhibiting oxidative processes, E300 extends the shelf life of products.
  • Flour treatment agent: In the baking industry, E300 improves dough structure and baking performance.
  • Color stabilizer: In meat products, E300 helps maintain the natural red color of fresh meat.
  • Acidity regulator: E300 can influence the pH level of food products.

Typical foods containing E300 include fruit juices, jams, canned goods, meat products, baked goods, frozen foods, and beverages.

Mechanism of Action

Ascorbic acid acts as a powerful reducing agent. It donates electrons to neutralize reactive oxygen species (free radicals) that can damage food components. Through this mechanism, E300 protects sensitive molecules such as unsaturated fatty acids, color pigments, and vitamins from oxidative degradation. In the human body, Vitamin C performs the same antioxidant protective function and is additionally involved in collagen synthesis, immune defense, and iron absorption.

Safety and Tolerability

E300 is considered extremely safe and well-tolerated. The European Food Safety Authority (EFSA) and the World Health Organization (WHO) have classified ascorbic acid as a safe food additive. No Acceptable Daily Intake (ADI) value has been established, as E300 is regarded as physiologically safe. However, very high amounts (several grams per day) can cause gastrointestinal complaints such as diarrhea or nausea. For most people, the amounts ingested through food additives are well below problematic thresholds.

Legal Framework in the EU

E300 is authorized in the European Union under Regulation (EC) No 1333/2008 on food additives. The permitted usage levels vary depending on the food category. In many applications, the quantum satis principle applies (as much as technologically necessary), while in other categories specific maximum levels are defined.
