What is E330 (Citric Acid)?

E330 is the EU-designated code for citric acid, an organic acid that occurs naturally in citrus fruits such as lemons, oranges, and grapefruits. In the food industry, citric acid is predominantly produced through microbial fermentation using molds such as Aspergillus niger. It is one of the most widely used food additives in the world and is also a fundamental component of human cellular metabolism.

Uses and Applications

E330 is used across a broad range of food products, beverages, cosmetics, and pharmaceutical preparations. Its primary functions include:

  • Acidulant: Provides a tart, fresh flavor to foods and drinks.
  • Preservative: Inhibits microbial growth by lowering the pH of products.
  • Antioxidant: Protects foods from oxidative deterioration and discoloration.
  • Stabilizer and emulsifier: Supports the texture and shelf life of food products.
  • Descaling agent: Used in household cleaning products to remove limescale.

Occurrence in Foods

Citric acid is found in a wide variety of processed foods, including:

E330 is considered safe by the European Food Safety Authority (EFSA) and the World Health Organization (WHO). No specific Acceptable Daily Intake (ADI) value has been established, as citric acid is classified as a substance of no safety concern at typical levels of consumption. Citric acid is also a natural intermediate in the citric acid cycle (Krebs cycle), a central metabolic pathway in human cells for energy production.

Possible Side Effects

In very high amounts or in sensitive individuals, citric acid may cause the following effects:

  • Irritation of the oral mucosa and dental enamel erosion from excessive consumption of acidic products
  • Gastric irritation at very high intake levels
  • Rare allergic reactions, particularly to citric acid derived from fungal fermentation

For the vast majority of people, E330 is completely safe and well tolerated at normal dietary intake levels.

Labeling and Regulatory Information

In the European Union, E330 must be declared on ingredient lists in accordance with Regulation (EC) No 1333/2008 on food additives, either as E330 or as citric acid. For many food categories, it is subject to the quantum satis principle, meaning it may only be used in the minimum quantity necessary to achieve the intended technological effect.
