Tempeh ist ein fermentiertes Sojaprodukt, das ursprünglich aus Indonesien stammt und dort seit Jahrhunderten als pflanzliche Proteinquelle dient. Es wird hergestellt, indem gekochte Sojabohnen mit dem Edelschimmel Rhizopus oligosporus geimpft und fermentiert werden. Während der Fermentation entsteht ein fester, kompakter Block mit nussigem Geschmack und hohem Nährwert, der Tempeh zu einem wichtigen Bestandteil einer gesunden, pflanzenbasierten Ernährung macht.
