500 g Hokkaido-Kürbis

g mixed mushrooms (chanterelles, oyster mushrooms, king oyster mushrooms…oyster mushrooms…) 100 g Field salad
2 EL Walnüsse
3 EL Light balsamic vinegar
6 EL olivesöl, e.g. B. PHENOLIO
1 TL Honey, e.g. B. MANUKA

Preparation
- Clean the pumpkin, remove the seeds and cut the pumpkin into thin slices. Clean the mushrooms and halve them according to size. Wash the lettuce and spin dry.
- Sauté the walnuts in a pan without fat until they start to smell fragrant, then set aside.
- Heat 1 tbsp olive oil in a pan and fry the slices of rump on both sides until golden brown. Season with salt and pepper and remove from the pan.
- Fry the mushrooms in the pan with a little olive oil, season with salt and pepper and add to the sliced pumpkin.
- Mix 3 tbsp vinegar with honey and 4-5 tbsp olives for the dressing.
- Mix the sliced pumpkin, mushrooms and lamb's lettuce with the dressing and serve lukewarm with the walnuts.
