Vegetable patties from the oven with guacamole

Preparation
- Preheat the oven to 200° C.
- Cut the celeriac, peppers, carrots, red onions and fennel into evenly sized pieces. In a large bowl, mix the prepared vegetables with the chopped rosemary, thyme and pressed garlic cloves, olive oil and a generous pinch of salt.
- Prepare a piece of baking paper for each vegetable. Place a portion of the prepared vegetables in the center of each piece of baking paper. Fold the sides of the baking paper upwards and close the edges well with twine to form a puff.
- Place the parcels on a baking tray and bake in the preheated oven for around 25-30 minutes until the parcels are cooked.
- In the meantime, cut the avocados in half, remove the pit and scoop out the flesh with a spoon and place in a bowl. Mash the avocado flesh with a fork until a creamy consistency is achieved. Squeeze the lime and add the juice to the mashed avocados. Season to taste with a strong pinch of cumin, salt and pepper.
- Remove the vegetables from the oven and serve with the guacamole.

Thyme is particularly beneficial to health thanks to its essential oils: they have antibacterial, antibiotic, anti-inflammatory, expectorant and antispasmodic properties. We prefer fresh thyme, as this is when the flavor, aroma and other active ingredients are at their best.
Garlic is also known as a natural antibiotic. It also has numerous positive effects on our health, which is why it can be used a lot in species-appropriate cooking.
Olivesöl are a natural source of fat and therefore an important source and store of energy. PHENOLIO rounds off the dish with its fresh, fruity and tangy flavor. It also has a very high content of polyphenols, which have a health-promoting, anti-inflammatory and beneficial effect.
