Things worth knowing about "Malic acid"

Malic acid is a naturally occurring organic acid found in many fruits and plays an important role in the body's energy metabolism.

What is Malic Acid?

Malic acid (chemical name: 2-hydroxysuccinic acid; German: Apfelsäure) is a naturally occurring organic acid belonging to the group of hydroxy carboxylic acids. It is found in many fruits and vegetables, most notably in apples, which are responsible for its characteristic tart taste. In the food industry, malic acid is used as a food additive under the designation E 296.

Sources and Occurrence

Malic acid is found naturally in a wide range of foods. The richest natural sources include:

  • Apples (highest natural content)
  • Cherries, plums, and grapes
  • Gooseberries and currants
  • Tomatoes and carrots
  • Rhubarb
  • White wine and apple juice

In the food industry, malic acid is also produced synthetically and used as an acidulant in beverages, sweets, desserts, and other processed foods.

Biological Functions and Mechanism of Action

In the human body, malic acid fulfills several important physiological roles:

  • Citric acid cycle (Krebs cycle): Malic acid is an intermediate in the citric acid cycle, a central metabolic pathway for energy production in cells. It contributes to the production of ATP (adenosine triphosphate), the universal energy carrier of cells.
  • Detoxification support: Malic acid has been discussed as a potential aid in the elimination of heavy metals such as aluminum from the body.
  • Saliva stimulation: Malic acid can stimulate saliva production, which may support oral hygiene.
  • Muscle energy: In sports nutrition, malic acid is frequently used in combination with magnesium as a dietary supplement to reduce fatigue and support muscle performance.

Medical and Therapeutic Uses

Malic acid is applied in various medical and para-medical contexts:

Fibromyalgia

Some studies have investigated whether a combination of malic acid and magnesium can relieve pain and fatigue associated with fibromyalgia – a chronic pain condition. Evidence is currently limited but shows promise.

Sports and Performance

In sports nutrition, malic acid is a key component of citrulline malate. This supplement is claimed to improve endurance, accelerate recovery, and reduce muscle soreness.

Oral Health

Malic acid is included in some mouthwashes and dental care products due to its potential antibacterial properties and positive influence on the oral microbiome. However, due to its acidic nature, prolonged direct contact with tooth enamel should be minimized.

Recommended Intake and Dosage

There is no officially established daily recommended intake for malic acid from the WHO or the European Food Safety Authority (EFSA). Through a balanced, fruit-rich diet, adults typically consume sufficient malic acid naturally. As a dietary supplement, doses of 1,200 to 2,800 mg per day are commonly used, often in combination with magnesium.

Safety, Side Effects, and Interactions

Malic acid is considered safe when consumed through normal dietary intake. When taken in high-dose supplement form, the following side effects may occur:

  • Stomach irritation or digestive discomfort
  • Diarrhea at very high doses
  • Erosion of tooth enamel with frequent and direct contact

Interactions with medications are not well documented. Individuals with kidney problems should consult a healthcare professional before taking malic acid supplements.
