What is E341?

E341 is the European Union approval number for calcium phosphates, a group of calcium salts derived from phosphoric acid. They are authorized food additives used in processed foods and supplements to serve various technological functions. E341 is regulated in the EU under Regulation (EC) No. 1333/2008 on food additives.

Subtypes of E341

The designation E341 covers three chemically distinct compounds:

  • E341(i) – Monocalcium phosphate (also calcium dihydrogen phosphate): commonly used as a leavening agent, as it reacts with sodium bicarbonate to release carbon dioxide during baking.
  • E341(ii) – Dicalcium phosphate (also calcium hydrogen phosphate): used as an acidity regulator, separating agent, and carrier in tablets and powders.
  • E341(iii) – Tricalcium phosphate (also tricalcium orthophosphate): used as an anti-caking agent and carrier, particularly in powdered products.

Technological Functions

Calcium phosphates (E341) fulfil several technological roles in food and dietary supplements:

  • Acidity regulator: stabilizes pH levels in food products
  • Leavening agent: produces carbon dioxide during baking for a light, airy texture
  • Anti-caking agent: prevents clumping in powder-based products
  • Stabilizer: improves texture and shelf life of food

E341 is found in a wide variety of processed food products, including:

  • Baked goods (bread, biscuits, cakes, baking powder)

  • Instant beverages and milk powder
  • Dietary supplements and calcium tablets
  • Infant and toddler food (under strict regulatory conditions)

Biological Significance and Safety

Calcium and phosphate are essential minerals that occur naturally in the human body. Calcium is critical for building bones and teeth, muscle contraction, and nerve signalling. Phosphate is a component of ATP (the body's energy currency), DNA, and cell membranes.

The European Food Safety Authority (EFSA) has assessed E341 as safe when used within established maximum levels. For most food categories, the principle of quantum satis (as much as technologically necessary) applies. However, excessive phosphate intake can be problematic for individuals with impaired kidney function, as the kidneys play a central role in regulating blood phosphate levels.

Recommended Daily Intake

The European Food Safety Authority (EFSA) recommends a daily calcium intake of 1000 mg for adults, and a daily phosphorus intake of 550 mg. Intake from food additives such as E341 contributes to total daily intake and should be considered in the context of overall diet.

Labelling

On food ingredient lists, E341 must be declared either as E341 or by its name calcium phosphates. Consumers with kidney disease or those following a low-phosphate diet should pay close attention to product labelling.
