Carotenoids are responsible for the yellow, orange and red colours of many fruits and vegetables and play an important role in photosynthesis and as antioxidants.They are divided into two main categories: carotenes, such as beta-carotene, and xanthines, such as lutein and zeaxanthin.Beta-carotene is converted into vitamin A in the body and is important for maintaining healthy vision and immune function.
