Modifizierte Stärke ist ein industriell veränderter Stärkezusatzstoff, der aus pflanzlichen Rohstoffen wie Mais, Kartoffeln, Reis oder Weizen gewonnen wird.
Durch physikalische, chemische oder enzymatische Verfahren wird die modifizierte Stärke so verändert, dass sie bestimmte technologische Eigenschaften aufweist. Dazu zählen beispielsweise eine bessere Hitzebeständigkeit, Stabilität bei pH-Schwankungen oder Kältebeständigkeit.
Eingesetzt wird modifizierte Stärke in zahlreichen verarbeiteten Lebensmitteln wie Fertiggerichten, Saucen, Suppen, Backwaren oder Milchprodukten, um die Konsistenz zu verbessern, das Verdickungsverhalten zu steuern oder das Produkt länger haltbar zu machen. Sie ist in Europa zugelassen und meist über eine E-Nummer gekennzeichnet (z. B. E1404–E1452). Obwohl modifizierte Stärke als grundsätzlich unbedenklich gilt, kann sie bei übermäßigem Verzehr zur Erhöhung der glykämischen Last beitragen.
