In the human body, Vitamin C performs the same antioxidant protective function and is additionally involved in collagen synthesis, immune defense, and iron absorption.
Safety and Tolerability
E300 is considered extremely safe and well-tolerated. The European Food Safety Authority (EFSA) and the World Health Organization (WHO) have classified ascorbic acid as a safe food additive. No Acceptable Daily Intake (ADI) value has been established, as E300 is regarded as physiologically safe. However, very high amounts (several grams per day) can cause gastrointestinal complaints such as diarrhea or nausea. For most people, the amounts ingested through food additives are well below problematic thresholds.
Legal Framework in the EU
E300 is authorized in the European Union under Regulation (EC) No 1333/2008 on food additives. The permitted usage levels vary depending on the food category.
