What is Potassium Sorbate?

Potassium sorbate (chemical name: potassium salt of sorbic acid, E 202) is a synthetically produced preservative used worldwide in the food, cosmetics, and pharmaceutical industries. It is the potassium salt of sorbic acid, a naturally occurring organic acid originally derived from the berries of the rowan tree (Sorbus aucuparia). Today, potassium sorbate is predominantly produced by chemical synthesis and appears as a white, crystalline powder or granule that dissolves readily in water.

Mechanism of Action

Potassium sorbate acts as an antimicrobial agent by inhibiting the growth of molds, yeasts, and certain bacteria. Once absorbed into a microbial cell, sorbic acid disrupts key enzymatic functions, thereby interfering with cellular metabolism. The substance is most effective in an acidic pH range (pH 3 to 6.5), where it predominantly exists in its uncharged, membrane-permeable acid form. At higher pH levels, the antimicrobial efficacy decreases significantly.

In the pharmaceutical industry, potassium sorbate is used as an excipient in liquid medicines, syrups, and topical preparations to extend their shelf life.

Safety and Health Assessment

Potassium sorbate is regarded as safe by major international regulatory authorities, including the European Food Safety Authority (EFSA) and the Joint FAO/WHO Expert Committee on Food Additives (JECFA), when used as intended. The acceptable daily intake (ADI) for sorbic acid and its salts is set at 25 mg per kilogram of body weight per day.

In rare cases, hypersensitivity reactions may occur, particularly in individuals with known food intolerances. Symptoms can include skin irritation, itching, or gastrointestinal discomfort. Compared to many other preservatives, however, potassium sorbate is considered well tolerated and is approved in numerous countries worldwide.

On food ingredient lists, potassium sorbate is declared either by its name or as E 202. Consumers who wish to avoid preservatives may look for products without additives or those preserved by alternative methods such as freezing or pasteurization.
